Frequently Asked Questions
-
To guarantee ultimate freshness and quality, all of our fish is frozen in vacuum sealed bags within 8 hours of being caught—unless fresh, unfrozen delivery is specifically requested. Freezing the catch at peak freshness locks in the natural flavors, delicate texture, and essential nutrients, giving you a ocean-fresh experience every time.
-
We source our seafood directly from local, fisherfolk along the Belize Barrier Reef including ourselves. By purchasing directly from coastal fishing communities, we ensure complete traceability, fair pay for local producers, and the highest standard of care from boat to plate.
-
Responsible sourcing means respecting natural ocean cycles. We strictly enforce policies against buying undersized or out-of-season fish to protect breeding populations. We also work exclusively with local fisherfolk who follow sustainable fishing practices, helping keep the Belize Barrier Reef thriving for generations to come.

Yes! Beyond raw seafood, we offer a selection of chef-crafted, ready-to-eat seafood options and organic produce grown on our own farm. This allows you to build complete, sustainable, locally grown meals through a single order.

For optimal texture and flavor, thaw your vacuum-sealed fish overnight in the refrigerator. If you need it sooner, submerge the sealed package in a bowl of cold water for 20 to 30 minutes. Avoid using warm water or microwaves, as heat breaks down the delicate muscle fibers of the fish.
-
Absolutely. While our standard protocol is freezing within 8 hours to preserve peak quality, we accommodate special requests for fresh, unfrozen catches based on daily landing availability. Simply contact us ahead of time or note your request at checkout.

We do not label or market our fish as "sushi grade." While our catch is frozen within 8 hours to lock in freshness, achieving a formal commercial "sushi grade" classification requires specialized ultra-low-temperature flash-freezing equipment beyond standard freezing. Some of our customers choose to prepare our fresh-caught fish raw (such as in ceviche, poke, or sashimi) based on their own judgment, but raw consumption is always a personal choice and no recommended by us.
